TRYOUTS: Strawberry Oatmeal Bars

Throughout the pandemic, I've come to realize — nay, accept — that sugar and I are not as chummy as I once presumed.
Luckily, there are many great low-sugar recipes to try out from "the inter-webs", like this one I found from The Oven Light.
With a limit on refined sugar and an emphasis on quick, simple recipes, this seemed like a solid pick.
Some alterations I made:
I used boiled down strawberries as my filling, as opposed to berry preserves, which I picked up from a local, hometown grocery store (they were running a deal — I love me that strawberry szn!).
I also subbed out coconut flour for regular flour, which I think made them bit more crumbly, but, hey, they still taste great.
The final change I made was to double the maple sugar, instead of adding coconut or granulated sugar.

This was a quick recipe that was enjoyable to make and helped me feel productive about my "snack prep" for the upcoming work week.
